Family Recipe: Whole Roasted Tomatoes

My mother-in-law devised this simple, yet delicious recipe that lets you turn those heirloom garden tomatoes or even the standard store-bought variety into special sauces, soups or salsas. You can store or freeze your creations for that fresh tomato taste all year long. We like to use the roasted tomatoes for homemade sauce and gazpacho.

6-12 (or however many you want) whole tomatoes, cored
1/2 cup packed fresh basil
1/2 cup olive oil
3 garlic cloves, chopped
Salt and pepper to season

  1. Preheat oven to 350 degrees F. Spray a baking pan or cookie sheet with non-stick oil.
  2. Chop your garlic and basil.
  3. Core tomatoes.
  4. Line up whole tomatoes on cookie sheet and drizzle with olive oil. Sprinkle basil and garlic on top.
  5. Bake until tomatoes collapse or until they look most desirable to you.
  6. Cool and store with all of the oil and seasoning from the pan.

You can remove the skins or not once they're cooled depending on your preference. And then chop, puree or dice them for any tomato creation you dream up. Serve your meal in authentic pottery for a real Italian feast.
